Chocolate Butter Crunch
1 cup butter
1 1/4 cups sugar
1/4 cup water
2 tablespoons light corn syrup
1 cup almonds, ground and divided (2/3 cup & 1/3 cup)
1/2 teaspoon vanilla
3/4 cup chocolate chips

  1. Line a jelly roll pan with foil
  2. Generously butter foil with butter
  3. melt butter in medium saucepan over medium heat
  4. Add sugar, water and corn syrup
  5. Cook until temperature reaches 290o F, stirring constantly
  6. Stir in 2//3 cup almonds and vanilla
  7. Pour in to prepared pan
  8. Spread into corners
  9. let stand 1 minute
  10. Sprinkle chocolate chips over candy
  11. Allow chocolate to melt for 2 to 3 minutes
  12. Spread melted chocolate
  13. Sprinkle remaining almonds
  14. Allow to cool and break into pieces
