Filled Cookies
1/2 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt
Your choice of fillings (listed below)

Cream shortening, gradually adding sugar

Add egg and vanilla

Combine flour, baking powder, and salt

Combine flour mixture to sugar mixture

Wrap in plastic wrap, chill at least one hour

Roll out dough to 1/16" thickness, cut cookies (2 cuts
for each cookie)

Place bottom pieces on lightly greased cookie sheet

Gently spread 1 teaspoon of filling (keep off edges)

Cover with the top cookie

Press edges together with floured fork
-
Bake at 400 F for 8 to 10 minutes
Fillings
Cherry
1 cup sugar
3 tablespoon cornstarch
1 cup orange juice
24 maraschino cherries (chopped)
1/2 cup maraschino cherry juice
2 tablespoons butter

Blend dry ingredients together in saucepan.

Add remaining ingredients

Bring to rolling boil,

Boil 1 minute, stirring constantly

Chill
Date/Nut
2 cups dates (chopped)
3/4 cup sugar
3/4 cup water
1/2 cup nuts (chopped)

Place dates, sugar and water together in saucepan

Cook over medium to low heat (constantly stirring) until
thickened

Add nuts
-
Let cool
Pineapple
1 cup sugar
1/4 cup flour
1 1/2 cups crushed pineapple (drained)
3/4 cup pineapple juice
1/4 cup lemon juice
3 tablespoons butter
1/4 teaspoon nutmeg

Mix flour and sugar together in saucepan

Add remaining ingredients

Cook over medium to low heat (constantly stirring) until
thickened

Let cool
Raisin
2 cups raisins (chopped)
3/4 cup sugar
3/4 cup water

Place all ingredients together in saucepan

Cook over medium to low heat (constantly stirring) until
thickened
