Ginger Almond Cookies
1 1/2 cups shortening
1 1/2 cup sugar
3/4 cup light molasses
4 cups flour (sifted)
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 tablespoons plus 1 teaspoon ginger
1 tablespoon cinnamon
1 tablespoon cloves
1 1/2 cups chopped almonds

Cream shortening, sugar, and molasses until fluffy

Mix in dry ingredients

Stir in almonds

Roll dough into logs that are about 2 inches in diameter

Chill logs over night

Slice into 1/4 inch slices

Place cookies on lightly greased cookie sheet

Bake at 350 F for 12 to 15 minutes
