Oatmeal and Coconut Slices
1 cup butter/shortening mixed
1  cup sugar
1 cup brown sugar (packed)
2 eggs
2 1/2 cups flour (sifted)
1 cup rolled oats
1 cup flaked coconut
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon salt
 
 
  1. Cream shortening, sugars, vanilla, and eggs
  2. Mix in flour, soda, and salt together in bowl
  3. Stir in dry ingredients into shortening mixture
  4. Mix thoroughly
  5. Mix in oats and coconut
  6. Roll dough into logs that are about 2 inches in diameter
  7. Chill logs over night
  8. slice into 1/4 inch slices
  9. Place cookies on lightly greased cookie sheet
  10. Bake at 400 F for 10 to 12 minutes
