Pumpkin Cookies
1/2 cup shortening
1 1/2 cups brown sugar (packed)
2 eggs
1 3/4 cps canned pumpkin
 2 3/4 cups flour (sifted)
1 cup raisins
1 cup pecans
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon ginger
 
 
 
  1. Mix shortening, sugar, eggs, and pumpkin
  2. Mix dry ingredients together in large bowl
  3. Mix dry mixture into sugar mixture
  4. Add raisins and pecans
  5. Drop teaspoon onto an ungreased cookie sheet
  6. Bake at 400 F for 12 to 15 minutes
  7. Cookies may be iced when cooled.
