Blueberry Spice Cordial
1 (16 oz) package frozen blueberries, thawed
1 1/2 cups sugar
1/2 cup water
6 whole cloves
1 stick cinnamon
1 whole nutmeg, cut in half
3 cups brandy

Combine berries, sugar, water, cloves, cinnamon, and nutmeg
in a saucepan

Cook over medium high heat, stirring until sugar dissolves

Bring to boil, reduce heat and simmer 5 minutes

Remove from heat, let cool

Pour mixture into a 2 quart jar, add brandy, stir will

Cover tightly
-
Store in dark place for at least 2 weeks at room temperature

Shake jar gently once daily

Pour mixture through a wire mash strainer lined with cheesecloth,
into glass jars discarding fruit and spices
Seal jars, store at room temperature
Coffee Liqueur
1 1/2 cups sugar
1 cup firmly packed dark brown sugar
2 cups water 1/2 cup instant coffee granules
3 cups vodka
1/4 cup whole coffee beans

Combine sugars and water in a saucepan

Cook over medium high heat stirring until sugar dissolves
-
Bring to a boil, reduce heat and simmer 5 minutes

Remove from heat, stir in coffee granules
-
Let cool
-
Combine coffee mixture, vodka and coffee beans into a 1 gallon
jar
-
Cover tightly
-
Store in dark place for at least 2 weeks at room temperature

Shake jar gently once daily

Pour mixture through a wire mash strainer lined with cheesecloth,
into glass jars discarding coffee beans

Pour into glass jars
-
Seal jars, store at room temperature
Honey Pineapple Cream Liqueur
2 cps fresh pineapple, coarsely chopped
1/2 cup sugar
1/2 cup water
1/2 cup honey
1 tablespoon lemon juice
3 cps light rum
1 (14 oz) can sweetened condensed milk

Combine pineapple, sugar, water, honey, and lemon in a saucepan

Cook over medium high heat, stirring until sugar dissolves
-
Bring to boil, reduce heat and simmer 3 minutes
-
Remove from heat, let cool

Pour mixture into a 2 quart jar, add rum, stir will
-
Cover tightly
-
Store in dark place for at least 2 weeks at room temperature

Shake jar gently once daily

Pour mixture through a wire mash strainer lined with cheesecloth,
into large bowl discarding pineapple

Add milk, and whisk
-
Pour into glass jars
-
Seal jars, store in refrigerator
Kahlua
1 quart water
2 1/2 cups sugar
3 tablespoons instant coffee
1 teaspoon vanilla
2 1/2 cups vodka
-
Combine water sugar, and coffee in sauce pan.
-
Cook over medium high heat, stirring until sugar dissolves
-
Bring to boil, reduce to very low heat and simmer 3 hours
-
Mixture will be dark and syrupy.

Let cool
-
Add vanilla and vodka
Pour into glass bottles, and seal
Orange Liqueur
4 medium oranges
1 small lemon
1 cup sugar
3 cups vodka

Remove rind from oranges and lemon with vegetable peeler.

Cut rind in to 3" strips, set aside
-
Squeeze 1 1.3 cups juice from oranges
-
Squeeze juice from lemon
-
Combine juices and sugar in saucepan
-
Cook over medium high heat stir until sugar dissolves.

Remove from heat, and let cool

Pour mixture into 2 quart jar

Add rind strips and vodka, stir well
-
Cover tightly
-
Store in dark place for at least 2 weeks at room temperature

Shake jar gently once daily

Pour mixture through a wire mash strainer lined with cheesecloth,
into glass jars, discarding rind

Seal jars, store at room temperature
Praline Liqueur
2 cups firmly packed dark brown sugar
1 cup sugar
2 1/2 cups water
4 cups pecan pieces, lightly toasted
2 vanilla beans, split lengthwise
4 cups vodka

Combine sugars and water in a saucepan
-
Cook over medium high heat stirring until sugar dissolves
-
Bring to a boil, reduce heat and simmer 5 minutes

Place pecans and vanilla beans into 1 gallon jar
-
Pour hot mixture into jar
-
Let cool
-
Add vodka, stir well
-
Cover tightly
-
Store in dark place for at least 2 weeks at room temperature

Shake jar gently once daily

Pour mixture through a wire mash strainer lined with coffee
filter, into second 1 gallon jar discarding pecans and vanilla

Pour into glass jars

Seal jars, store at room temperature
Raspberry Cordial

Pour into glass jars
Seal jars, store at room temperature
