Golden Marmalade
2 large oranges
3 large lemons
2 small grapefruit
12 cups sugar (6 lbs.)
water

Wash fruit well

Place fruit in large pot (dutch oven, soup pot...)

Add 10 cups of water

Bring to boil, than reduce heat to simmer

Allow to simmer for about 2 hours, until fruit is tender
and water has reduced to about half

Remove fruit from pot, let cool

Slice fruit into quarters

Remove seeds.

Scrape out pulp into the remaining water in pot

Cut rinds into slivers, and place back in pot

Add sugar

Set heat on Medium and stir until sugar is dissolved.

Bring to boil and cook until done

To test for doneness place a teaspoon of marmalade
onto a plate, let cool slightly. If a thin skin forms it's done.

Remove pot from heat, allow to stand for 1 hour

Pour into sterilized jars and seal.
Great served over sponge cake, ice cream, as well
as toast!
