2 acorn squash, halved lengthwise and seeds removed
1/2 cup water
1 12 stick butter
1 large apple, cored and cut into small pieces
1/3 cup brown sugar, packed
1/4 teaspoon cinnamon
2 teaspoons vanilla
1/4 cup pecans, chopped
Bake squash cut side up in water (at 400o F in oven for 45 minutes OR approximately 8 minutes on High in microwave) until tender If using microwave start filling now, if using conventional oven wait until about 10 minutes before starting filling Melt butter in skillet Stir in apple, sugar cinnamon and vanilla Cook over medium heat, constantly stirring until apples are tender Spoon into squash, garnish with pecans
