Almond Yule Logs
2 dozen logs
2 -- 7oz. tubes almond paste
2/3 cup confectioners' sugar
2 large egg whites
2 cups sliced almonds
  1. Cut almond paste into 1-inch chunks.
  2. Beat at low speed until paste crumbles.
  3. Add sugar and egg whites; beat until well blended
  4. Place almonds on sheet of waxed paper
  5. Lightly flour hands
  6. Roll 1 tablespoon dough into a 3-inch-long log
  7. Place log on almonds, press gently and roll, until covered with almonds
  8. Place on greased and floured cookie sheet
  9. Repeat with rest of dough
  10. Bake at 325o F for 20 to 25 min. Until golden brown
  11. Remove from cookie sheet, let cool on wire rack.
