Baking with Coffee

Coffee Brulee

 
  3 cups cream
  6 egg yolks
  1 tablespoon vanilla sugar
  1 1/2 tablespoons vanilla extract
  1/4 cup instant coffee
  2 tablespoons Kahlua
  2 tablespoons sugar
 
 
  1. Pre heat oven to 300o F
  2. Place cream in double boiler
  3. While cream is heating, beat egg yolks
  4. add vanilla sugar, vanilla, coffee and Kahlua.
  5. Add mixture to warmed cream.
  6. Continue cooking until thick (stir constantly)
  7. Strain the mixture through a fine sieve, into a large soufflé or individual custard dishes.
  8. Place soufflé or custard dishes in large shallow pan.
  9. Place pan in oven, fill with water
  10. Bake for 35 to 45 minutes, until center of custard is firm
  11. Remove from water, let cool.
  12. Cover and chill
  13. Sprinkle sugar over top(s)
  14. Place under broiler, until sugar has caramelized. WATCH CLOSELY!
  15. Remove and chill for 3 hours
